Pankaj Bharti, the owner of ‘Chhotu Dhaba’ near the Koderma Superintendent of Police’s residence, shared that the tadka is made using black urad dal and chana dal, combined with pure mustard oil and a blend of secret spices.
Currently, a plate of tadka is priced at Rs 120, while a roti costs Rs 6. He mentioned that many customers have taken it to Hyderabad, where it was also well-received. Due to the dhaba’s location on the National Highway, people from different states stop by to enjoy the Tadka Roti. The dhaba operates daily from 8 AM to 3 PM.
The Secret Behind Its Flavour
Chef Kailash Yadav from the dhaba explained that the masala is prepared by mixing ginger, garlic, green chilli, tomato, onion, and red chilli in pure mustard oil.
The lentils are then boiled thoroughly. Later, tomato, coriander leaves, garam masala, and a blend of secret spices are added. The entire preparation is slow-cooked over a traditional stove, enhancing its rich and authentic taste.
